  1. Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. Sift powdered sugar and almond flour together.
  3. Beat the egg whites until foamy.
  4. Gradually add granulated sugar and beat to stiff peaks.
  5. Fold dry ingredients into the meringue, adding food coloring if desired.
  6. Pipe circles onto baking sheets and tap to release air bubbles.
  7. Let sit for 30 minutes to form a skin, then bake for 15-18 minutes.
  8. Cool completely before filling and assembling.
